Well I was wrong, this post falls under the category of experimental recipes. I had some dried cranberries left over and thought I would make muffins. I had a recipe for cranberry muffins that had little nutritional value, and I had some whole wheat flour on hand. I knew it was impossible to just replace all purpose flour with whole wheat flour.
Here is the recipe:
2.1 oz of 100% whole wheat flour
6.4 oz of all purpose flour
2.5 oz of flour
2 tsp. baking powder
1/4 tsp. salt
1 beaten egg
1/4 cup cooking oil
1/2 cup King Arthur Harvest blend grains
mix the dry ingredients together and then mix the wet ingredients together separately. Then pour the wet onto the dry, add the chopped dried cranberries and stir to combine. Pour into a muffin pan and bake in oven preheated to 400 degrees for 18-20 minutes.
